Chief Sommelier Nicolas Deneux joined the team at SPOON by Alain Ducasse at InterContinental Hong Kong in January 2009, following four years at the 3-star Michelin restaurant “Alain Ducasse au Plaza Athénée” in Paris.
His experience with Michelin star restaurants in Paris is impressive --- having also worked at Restaurant “Goumard” (1-star Michelin), Restaurant “Le Meurice” (2-star Michelin) and Restaurant “La Tour d’Argent” (2-star Michelin). His work experience also includes an apprenticeship at Restaurant “La Baraque” in Nangis, France.
Nicolas received his official restaurant and sommelier training and received certificates from the Hospitality School of Médéric in Paris and the Hospitality School of Saint-Germain Laval.
In his free time, he enjoys sports, cinema and visits to vineyards.
The SPOON Wine Cellar
Nicolas overseas an impressive wine cellar, with a new list that he developed with over 650 wines and 6000 bottles from all over the world. The new wine features approximately 70% French wines – showcasing ones from Burgundy, Rhone Valley, Bordeaux and the Loire Valley. The remainder of the selections will come from the rest of the world, with Old and New World selections reflecting the international "SPOON spirit".
As per Nicholas, “I encourage guests to be adventurous in their wine selections. Personally I like to buy and taste wines from small vintages and off-the-beaten path vineyards from lesser known wine producing countries like Greece, Morocco and Croatia.”
SPOON also showcases a range of exclusive international Magnum and Jeroboam (double magnum) wines by the glass. SPOON was the first restaurant in Asia to offer magnum wines of this quality by the glass.
SPOON’s recent evolution also includes the introduction of a new concept for wine by the glass with individual decanters of 25cl designed especially for SPOON by Gerard Margeon, Chef Sommelier for the Alain Ducasse’s restaurants.
SPOON Awards
SPOON has been recognized by the prestigious Wine Spectator Magazine (USA) for four consecutives years as having one of the most outstanding restaurant wine lists in the world. In 2008 and 2009, Wine Spectator acknowledged SPOON with the prestigious “Best of Award of Excellence”, following “Awards of Excellence” in 2006 and 2007.
