For most of us, Provence is no more than a postcard: sun-backed antique limestone villages, sturdy bunches of thyme and sage growing freely in the shade of the noble olive trees that sometimes grow along the perfumed fields of lavender. Well, beyond the cliché, the games of pétanque and Pastis, Provence produces some of the greatest wines in the world, and probably some of the less known as well.
For the past 5 years, the international demand for quality Rosé wines, and especially Provence Rosés has increased spectacularly. The general production has made a tremendous leap, following the steps of long well established domains such as Domaine d’Ott or Château Minuty.
For the vast majority of the production, rosés used to be simple byproducts of the production of red wines, made with the fermented light-colored juices drained from pre-fermenting Grenache, Carignan or Mourvèdre tanks. Today, grapes are grown specifically to produce quality rosé and most cellars are equipped with controlled temperatures tanks, a critical instrument to preserve color and freshness in the wines.
Some of the red wines produced in the region, in Appellations like Bandol challenge the traditional Bordeaux and Bourgogne on the best gastronomic tables. The confidential production of quality white wines from Palette or Cassis also gathers an international following.
