En Août 2009, Éric Bouletin, vigneron à Vacqueyras, dans le Rhône, recevait Vinomaniac.tv pour une première rencontre. Éric, qui s'est lancé dans l'aventure de Roucas Toumba en 2006, se définit d'abord comme un vigneron.
La vigne est au centre de son domaine, au cœur de ses préoccupations et sert de socle à sa philosophie, où terroirs, respects des sols et de la nature jouent un rôle prépondérant.
Atypique à Vacqueyras, les vins d'Éric Bouletin se distinguent par leur fraîcheur, leur authenticité et une très belle élégance dénuée d'apprêt.
Les Restanques de Cabassole font partie de ces vins que l'on oublie pas facilement: le grenache noir, la syrah, le mourvèdre s'expriment avec une très grande retenue, soulignant davantage le terroir, la rigueur de la viticulture que la chaleur du climat ou la rusticité attendue de Vacqueyras.
La vinification est au service du talent du viticulteur : modeste, discrète, juste. Pas d'extraction massive, pas de macération tape-à-l'œil, juste la très belle restitution d'une belle année, dans un beau terroir, ayant donné de beaux raisins.
