Un privilège rare et unique! Stéphane Follin-Arbalet, le Directeur Général de l'excellente "Maison" Bouchard Père et Fils (BPF) a invité Vinomaniac.tv à passer une journée à Beaune et à filmer les vendanges.
La journée a commencé avec la visite des anciennes caves du Château, une partie des bâtisses du château ont été construites à l'intérieur des fortifications de la ville de Beaune. Les bouteilles de Meursaults datant du 19e siècle ainsi que d'autres grands vins sont gardés avec précaution sous une couche épaisse de "noble" poussière!
Notre tour du vignoble à ensuite commencé. Place à l'action! 2009 promet d'être un millésime exceptionnel, alors comme attendu on peut dire que les raisins étaient tout simplement parfaits: robustes, mâtures, et juteux! Comme nous l'a expliqué Stéphane Follin-Arbelet, la nature a récompensé une longue année d'efforts dans le vignoble en donnant ces raisins exceptionnels. Pendant les vendanges, le défi est de préserver la qualité des raisins que l'on retrouvera dans le vin.
Ce qui fascine chez Bouchard Père et Fils est l'ordre et le bon-sens qui règne dans l'organisation et les choix techniques. Dans le vignoble, les grappes sont coupées et transportés dans de petits cageots de 13 kg. Sans attendre, les cageots sont transportés dans une cuverie "dernier cri" qui a été construit par le domaine il y a quelques années à Beaune. La cuverie est impressionnante, notamment parce que tout y est tellement planifié: les cageots sont vidés sur la table de tri, les raisins rouge sont alors débarrassés de leur rafle, et tombent par gravité dans une cuve de fermentation en bois située dix mètres plus bas. La journée s'est poursuivie par une série de dégustation des plus grands vins du domaine. Les vins rouges puis blancs (l'ordre de la signature BPF!) fait honneur à l'ambivalence de la philosophie du domaine: la modestie et la discrétion dans la fabrication du vin et la fierté de posséder 100 ha de Grands Crus et Premiers Crus. Et c'est exactement ce que l'on devrait attendre des vins de Bourgogne: un professionnalisme dans la vinification qui met en valeur l'exceptionnel d'un terroir. Mission accomplie.
