AOC Class
According to the INAO (Institut National de l'Origine et de la Qualité), the French National Institute in charge of guarantying the Origin and the Quality of food and beverage in France, the Appellation d'Origine Controlée (AOC), which translates as Controlled Terms of Origin, is defined as follow:
The AOC is a French sign that designates a product whose authenticity and distinctive qualities result from its geographical origin. It is the expression of the intimate relationship between a "terroir" and a product. The key elements that define an AOC:
- A geographical area: specific geological, agronomical, climatic and historical characteristics
- A human activity that provides specific conditions of production to benefit from the natural environment.
Natural elements and human factors are linked. A product from an Appellation d'Origine Contrôlée cannot be reproduced outside this distinctive area.

The AOC was born in France on July 30, 1935 to protect the French wine production after the numerous crisis that had threatened French wines since the 19th century: phylloxera, counterfeited wines, the winemakers' revolt…
The AOC was conceived to guarantee the origin of a wine. It provides the conditions of a fair competition between producers and offers a certified guarantee of origin to the consumers.
In order to be sold as an AOC, a product, such as a wine, must pass a series of controls, in the vines, in the cellar and must meet the chemical and organoleptic (tasting) standards of the appellation.
An AOC is a collective bran, shared by the producers. It is structured by a Producers' Union.
